any know which strings are plucked on the E and E7 while strumming EC's Sanfrancisco bay blues please?
I might be mis understanding your question but I'll have a go at trying to help. If you are strumming the tune then you aren't plucking strings, that would be relevant if you were picking the tune which you won't be on this particular tune. If you are strumming then you should be strumming all 6 strings on those 2 chords.

Tony is right, it's a strumming song, so E and E7 is with the low E in the bass, which allows you to use/strum all six strings.
