Even though I have the formula for major and minor chords down, it occurred to me that I never worked out the Bb chord formula. For some reason, it's tripping me up. So do I use
Bb. C. D. Eb. F. G. Ab? Using the 1-3-5 of this list?

A very quick answer, (haven't watched the lesson just yet), but the Bb major scale is what you've listed, except the Ab should be A.
And yes, the 1 3 5 of this scale is the Bb-major chord. Bb-D-F.
