If I get a song, lyrics and chords, and the songs is say G-D-G-D-Am-E-D (I'm thinking Wagon Wheel by OCMS here) and it says Capo at 2nd Fret, Standard Tuning, does that mean that when I put the capo at the second fret and play a G-shape, I'm actually playing an A major chord (A, C#, E), even though it says G. All the chords as listed above are actually the chords a whole step up, correct? So they are in fact A-E-A-E-Cm-F#-D.

Yes, that's correct. There are many songs I play using a capo so I can play the songs in a better key (vocally) for me but play easier chord configurations. For instance I'll often capo 3 and play the chords (shapes) C, F, Am, G, etc., but am singing and playing in Eb, Ab, Cm and Bb.
