Don't really know if this would be my favorite of all time, but I do find myself going back to this guy's cover of "Angela" from the show "Taxi" back in the day. Used to love this tune, and I think this guy does a pretty good job.

I second Tony's choice of Gary Moore, any song from the One Night in Dublin performance will do.

But for something less conventional I like Walk off the Earth's cover of the Gotye number, Somebody That I Used to Know. Musically it's very solid. Best YT video of all time? Probably not, but worth a butcher's if you haven't already seen it.
